Our Little Baker

Kennady asked me to make these special chocolate chip Paleo cookies that she likes to eat when she wants a healthier sweet treat. She and Keegan just got back from Hume Lake Christian Camp where they ate a lot of junk ;)

They each had an amazing time studying God's Word, worshiping Jesus and hanging with friends. We praise Jesus for an amazing Christian camp so close to us! 

Anyway...... Kennady wanted a healthy snack so I baked the Paleo cookies for her. Kaylee Grace decided she'd like to bake her own cookies.....she used almost all of the same ingredients I did but with totally different measurements (I just let her make her own little concoction but I had her use 1/2 almond flour and 1/2 regular since the almond flour is so expensive, lol). We baked each of ours and hers actually looked really good so Kennady tried them and said they were honestly amazing! Kinda turned out more like chocolate chip muffin-cookies ;)

She had fun making them and she ate a whole cookie once they were baked! 

Here is our Paleo Chocolate Chip Cookie Recipe:

1 1/2 C sifted blanched almond flour
1/4 tsp sea salt
1/4 tsp baking soda
*Mix all dry ingredients in a medium bowl

2 Tbs melted coconut oil
1/2 tsp vanilla extract 
1/4 C pure maple syrup 
1 egg
*Mix all wet ingredients then add to dry ingredients 
Add 1/2 C choc chips (Use Trader Joes or Enjoy Life chocolate chips because they are dairy free to make truly Paleo ~ I just used Costco brand since we don't have dairy allergies here ;)

Preheat oven to 350 and for best results refrigerate dough for 30 minutes. (I never have time for this step because I have kids waiting, lol, and they turn out just fine without refrigeration ;)

Bake at 350 for 9 minutes or until just golden brown on top. Let cool for 5 minutes and enjoy!!

I have a sugar sensitivity and I can't  eat refined sugars but I can handle one or two of these cookies since it's the maple syrup that sweetens them and I'm fine ;)
